Serves 8
1 package Lemon Jell-O
1 cup boiling water
1/2 cup cold water
1/2 cup chili sauce
1/2 teaspoon salt
1 cup salmon, tuna, or other cooked fish, flaked
2 cups cold cooked rice
1 green pepper -OR- 2 stuffed olives, chopped
1 small onion, finely chopped
Dissolve Jell-O in boiling water. Add cold water, chili sauce, and salt. Chill. When slightly thickened, fold in remaining ingredients. Turn into loaf pan. Chill until firm. Unmold. Slice and serve with a tart sauce.
