Paradise Pudding ©1927

Serves 8

1 package Lemon Jell-O
1 pint boiling water
1/2 cup blanched almonds
12 marshmallows, cut very fine
12 maraschino cherries, coarsely cut
6 macaroons, crushed
1/4 cup sugar
1/4 teaspoon salt
1 cup heavy cream, whipped

Dissolve Jell-O in boiling water. When cold and slightly thickened, beat with a rotary egg-beater until consistency of whipped cream. Mix and add cherries, nuts, marshmallows, macaroons, sugar, and salt. Fold in whipped cream. Turn into mold. Chill until firm. Serve in slices.
